I found a great web site that sends free newsleters containing recipes, cooking tips, and so much more. For anyone who's interested it is:

What's great about this site is it's visually-impaired friendly, it's easy to navigate, and there's all kinds of recipes, tips, and creative cooking ideas.

Hi. Since it's only me, I love these recipes. You could half the recipe, and make meals for one, or you could make the whole recipe and freeze the leftovers. I haven't tried halfing the recipes, but I will, and will let you know the way they turned out.
Also, I think they're good since they seem to fit all budgets, and don't seem to use a lot of hard to find ingredients.
